Are any products shipping with WSS 2016 yet, and if not, do we know when they'll be rolling out?

No, there aren't. We will be doing so later this year, most likely.
**A single copy of data, even on a RAID array, is NOT a backup! Hard drive failure is not a question of IF, but WHEN! Don't take my word for it, take Google's!**

Will it be possible to upgrade existing units from WSS 2012 R2 to 2016, or will it only be available for newly purchased products?

Microsoft has never allowed upgrading WSS in the past. Based on that I don't believe it will be possible in this case either.
