Is there a way to change the port that iSCSI uses from 3260 to something else...

You can use port 860 instead.

Sorry about that I just checked over the NAS in our office here and found there isn't a way for the iSCSI port to be changed. I'll check again but I'm pretty certain that you can't change the iSCSI communication port.
