I have created several folders (Shares) that essentially have zero Access Restrictions defined... but an associate can view all folders from her MacBook.  How is this possible?  We are on the same LAN, same subnet, no domain... but by browsing to the IP address of the NAS she can browse all folders.

Do I need to set up Security through Windows?

If you don't define any restrictions then the default is that anyone can access the share. In order to limit access you must define restrictions for a given folder.
