   ...all the hard drives in a HD-H1.0 with 320gb drives will I get the benefit of the lager drives or will it only see 250gb on each drive?

If you replace all of them you should, but it is not something we support.  If you replace them one at a time it will scale the size down to 250 GB.

It's getting harder and harder to find ide drives let alone 250GB ide's.
